Cheddar Bacon Chicken with Apple Butter Sauce

- 4 boneless skinless chicken breast halves
- salt
- pepper
- 4 strips bacon (cut in half crosswise)
- 1 Tbsp. Crisco Pure Vegetable Oil
- 3/4 cup chopped onion
- 3/4 cup chicken broth
- 2/3 cup Smucker’s® Cider Apple Butter
- 1 1/2 tsp. apple cider vinegar
- 1/2 cup shredded cheddar cheese

Directions
- FLATTEN chicken breasts with mallet to 3/4-inch thickness, if necessary. Sprinkle both sides generously with salt and pepper; set aside.
- COOK bacon in large skillet over medium heat until crisp. Remove from skillet and drain on paper towels. Remove all but 1 tablespoon bacon drippings from skillet. Add vegetable oil to skillet; heat over medium-high heat. Add chicken and cook until well browned on both sides, about 5 minutes. Remove from pan.
- ADD onion to skillet; cook 5 minutes or until tender. Stir in chicken broth, apple butter and vinegar. Bring to a simmer over medium heat.
- RETURN chicken to skillet, turning to coat with sauce. Cover and cook 4 to 5 minutes or until internal temperature reads 165°F. Place 2 half strips of bacon on top of each chicken breast; sprinkle chicken with cheese. Cover; let stand 3 minutes or until cheese is melted.
