This soup’s as creamy as it gets—it features a healthy helping of Cabot Salted Butter, along with milk, Cabot Sharp Cheddar and even some ale! We suggest garnishing the soup with some crumbled bacon as well. - 4 Tbsp. Cabot Salted Butter
- 1/2 cup minced onion
- 1/4 cup carrot (minced)
- 1/4 cup celery (minced)
- 1 bay leaf (small)
- 1/3 cup King Arthur Unbleached All-Purpose Flour
- 12 oz. ale
- 2 1/2 cups lowfat 1% milk
- 14 oz. 99% fat-free chicken broth
- 1 tsp. dry mustard
- 1 lb. Cabot Sharp Cheddar (Cabot Extra Sharp Cheddar or Cabot Seriously Sharp Cheddar, grated, about 4 cups)
- salt and ground black pepper (to taste.)
