- 213 grams pink salmon (drain off liquid from the tin)
- 213 grams red salmon (drain off liquid from the tin)
- 3 potatoes (medium size, peeled, boiled and mashed, leave them to cool)
- 1 onion (diced)
- 1 egg
- 3 tsp. English mustard (English Mustard is really strong so you can get this extra kick and great flavors)
- 2 Tbsp. breadcrumbs
- 1/2 lemon (finely grated zest plus juice)
- chive (small handful chopped)
- 1 cup breadcrumbs
- salt
- black pepper
- olive oil (for frying)

Directions
- 1. In a large bowl mix together all ingredients leaving only 1 cup of the breadcrumbs for coating (2tbsp breadcrumbs add to the fishcakes mix).
- 2. Season to taste with salt and freshly ground black pepper.
- 3. Shape mixture into fish cakes, and coat with the breadcrumbs.
