  • 2 chayote squash (large)
  • 1 onion (large, cut into half moons)
  • 100 grams panela cheese (fresh, may substitute mozzarella, cubed)
  • 1 tablespoon butter
  • 1 teaspoon olive oil
  • salt and ground black pepper

    Directions

    1. Peel and quarter the chayote squash and boil in water with a pinch of salt until soft. Drain and cool before cutting into cubes.
    2. Melt the butter and oil together in a large skillet. Saute the onion, stirring constantly until it begins to brown.
    3. Add the chayote and cook for 3 minutes. Add salt and pepper, remove from heat, and let cool slightly before adding the cheese. Mix together and serve.
