- 2 chayote squash (large)
- 1 onion (large, cut into half moons)
- 100 grams panela cheese (fresh, may substitute mozzarella, cubed)
- 1 Tbsp. butter
- 1 tsp. olive oil
- salt and ground black pepper

Directions
- Peel and quarter the chayote squash and boil in water with a pinch of salt until soft. Drain and cool before cutting into cubes.
- Melt the butter and oil together in a large skillet. Saute the onion, stirring constantly until it begins to brown.
- Add the chayote and cook for 3 minutes. Add salt and pepper, remove from heat, and let cool slightly before adding the cheese. Mix together and serve.
