This Chayote Squash and Zucchini Soup is both hearty and healthy. This flavorful soup combines peeled and chopped chayotes with rich and hearty ingredients for a powerful palate pleasing sensation. There are so many powerful flavors in this soup, it will guarantee to warm the heart and soul.

- 1 Tbsp. olive oil
- 1/2 onion (chopped)
- 2 chayote squash (peeled and chopped)
- 2 liters chicken stock
- 2 zucchini (diced)
- 2 poblano peppers (roasted, peeled, seeded, and cut into strips)
- tomato sauce
- ricotta cheese (or cottage cheese)

Directions
- Place a pot on the stove, pour in the olive oil and saute the onion until it becomes transparent, about 5 minutes.
- Add the squash and chicken stock. Cover the pot and cook for 10 minutes.
- Add the zucchini, and poblano peppers and mix well. Cover the pot again and simmer for 10 minutes on low heat.
- Serve with the tomato sauce and cheese sprinkled on top.
