- 1 cup garbanzo beans (cooked or canned)
- 1 cup white beans (cooked or canned)
- 1 cup kidney beans (cooked or canned)
- 1 cup black eyed peas (cooked or canned)
- 1 cup canned black beans (or cooked)
- 1 cup fresh green beans (cut in 1 inch pieces)
- 1 cup lima beans (frozen and thawed)
- 2 ears of corn (charred, kernels removed)
- 1 pickling cucumber (small, chopped, don't peel)
- 1/2 cup red onion (finely chopped)
- 1/2 cup red peppers (marinated, I used Bird's Beak peppers from the olive bar)
- 1 cup cherry tomatoes (halved or quartered)
- 1/3 cup extra-virgin olive oil
- 4 Tbsp. red wine vinegar
- 1 tsp. honey
- 1 tsp. Dijon mustard (grainy)
- 1 tsp. Dijon mustard (smooth)
- 1 pinch salt (and fresh cracked black pepper)
- 1 Tbsp. fresh thyme leaves
