- 1 lemon (medium, 2 Tbsp for mousse + 1 Tbsp for simple syrup below)
- 1 Tbsp. Knox unflavored gelatin (from 1¼ packets)
- 3 cups heavy whipping cream
- powdered sugar (6 Tbsp confectioners)
- 4 large eggs (room temperature)
- 2/3 cup granulated sugar
- 2/3 cup cake flour (make your own with 2 ingredients!)
- 1/4 tsp. baking powder
- 7 oz. lady fingers
- 4 Tbsp. raspberry preserves (or jam)
- 1 cup warm water
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. sugar
- 1 cup fresh raspberries (and mint leaves for garnish, optional)
