Description
As you may have intuited, Charleston Red Rice is popular in Charleston, SC (and the rest of the coastal Lowcountry). It is now popular in our kitchens, because this recipe is fantastic. It takes a while because of the baking, but it's simple to prepare and well worth the time. This will make you the hit of any potluck, and your kids will like it too.

- 2 chicken sausages (Gilbert’s Bourbon Apple, sliced into 1/2 inch pieces)
- 2 cups rice (long-grain)
- 1 onion (medium, diced)
- 1/2 bell pepper (diced)
- 1 garlic clove (minced)
- 2 tsp. brown sugar
- 2 tsp. Old Bay Seasoning (or Cajun)
- 1 tomato paste (6-0z can)
- 14.5 oz. stewed tomatoes

Directions
- Pre-cook rice. Pro-tip: Use 2:1 ratio of rice to water. Add both to cold pot, bring to boil. Put lid on pot, reduce to simmer, and don't touch until the water is fully reduced!
- Preheat oven to 350 degrees.
- Dice onion, bell pepper and garlic.

Im so happy to find this recipe.
I've had this rice in Charleston SC at a very popular restaurant called NIGEL'S,where everything on the menu there is fantastic.
I've always wanted to know how to make this delicious rice dish. It's turned out great.
I followed the recipe completely and I was surprised that it called for baking and now I know why mine never came close to these flavors and textures before this recipe.
It is the brown sugar that sets it apart from other rice dishes so I wouldn't leave it out.
In Charleston SC, i've only seen this served as a side dish, but it could easily be a main course.
My family and I will enjoy this Charleston Red Rice with Sausage always.
