- 1 red onion (large, thickly sliced)

- 3/4 cup ketchup
- 1 Tbsp. ancho chile (powder)
- 1 Tbsp. honey
- 1 Tbsp. molasses
- 1 Tbsp. dark brown sugar
- 1/2 Tbsp. Dijon mustard
- 1/2 Tbsp. paprika
- 1/2 Tbsp. red wine vinegar
- 1/2 Tbsp. worcestershire sauce
- 1 pinch cayenne pepper
- 1 chilli (canned chipotle, in adobo, chopped)
- 1 cup dry red wine
