Thought the cooking time would be too long for the quantity but it turned out perfectly. Succulent and tasted great - I used rolled pork neck. Substituted the alcohol for ginger liqueur as that was what I had on hand and omitted the ginger but will definitely add some ginger next time. i blitzed the marinade in the rocket blender before adding to the roasting pan, sauce caramelized nicely and wasn't too runny. will definitely make again
