- 420 grams wide rice noodles (fresh)
- 8 prawns (peeled and deveined)
- 10 chicken (one inch slices/cubes of)
- 2 eggs (lightly beaten)
- 3 stalks spinach (of Asian, Sawi or Bok Choy)
- 2 1/2 cups hot water (or chicken stock)
- 3 Tbsp. oil
- 5 cloves garlic (sliced)
- 1 ginger (thumb sized piece of, sliced with skin)
- 3 Tbsp. scallion (chopped, / spring onion)
- 4 Tbsp. light soy sauce
- 1 tsp. sesame oil (Asian)
- 2 Tbsp. oyster sauce
- 1/2 tsp. dark soy sauce
- 2 tsp. cornflour (mixed in half a cup of water)
- 1/2 tsp. pepper (powder, use black or white pepper to suit your taste)
