- 2 shallots (medium, minced, perhaps 4 tablespoons; exact amount not critical)
- 1 Tbsp. butter
- 2 cups milk & cream (half-and-half, or a mixture, I prefer half-and-half; see Notes)
- 1 Tbsp. dijon (style mustard)
- 1 tsp. kosher salt (or to taste)
- 1/4 tsp. freshly ground black pepper (or to taste)
- 8 oz. grated Gruyère (or another hard Swiss cheese; about 2 - 3 cups)
- 2 oz. parmigiano (grated, Reggiano, about 1 cup)
- 1 lb. celery root (1 large or two medium-sized)
- 1 lb. potatoes (I prefer russets, but waxy ones work well; see Notes)
- butter (additional, for greasing baking dish, maybe a couple of teaspoons)
- parsley (or chives for garnish, optional)
