  • 8 cups vegetable broth
  • 4 cups potatoes (white, sliced into chunks)
  • 1/3 cup fresh parsley (or cilantro, chopped)
  • 2 bay leaves
  • 2 tsp. cumin
  • 1 lemon
  • 15 oz. golden hominy (can of, drained and rinsed)
  • 1/2 cup rice (uncooked, long grain, I used jasmine)
  • 6 corn niblets
