- 3 cloves garlic (minced)
- 8 cups vegetable broth
- 4 cups potatoes (white, sliced into chunks)
- 1/3 cup fresh parsley (or cilantro, chopped)
- 2 bay leaves
- 2 tsp. cumin
- 1 lemon
- 15 oz. golden hominy (can of, drained and rinsed)
- 1/2 cup rice (uncooked, long grain, I used jasmine)
- 6 corn niblets
