I had been daunted by the idea of cooking turkey legs, but have had a hard time finding delicious smoked legs so held me breathe (figuratively of course) and tried this recipe.
I didn’t have Montreal on hand and swapped it for sweet dry, a bar b que dry rub. I did everything else as notes and brined in this case for 8 hrs! These were DELICIOUS there will be a next time and I’m grilling these legs.

Very nice recipe! I let it brine for 24 hours and used mesquite seasoning to get a touch of smokiness! I cooked it to 175 internally, I think that is a touch hot, but none the less, very good! Thank you!

Nice flavor that I believe came from brining for 15 hours. It took longer to cook than directed though.
