- 1 head cauliflower (about a pound, broken into large pieces)
- 1 stalk celery (chopped)
- 1 carrot (peeled and chopped)

- 6 oz. evaporated milk (can)
- 1 1/2 cups shredded cheddar cheese (I love the Cabot brand!)

Very yummy soup for a cold day. I made some homemade soft pretzels to go with it and they complimented each other wonderfully.

Easy, yummy and will make this again! I used a big head of purple cauliflower so it was really pretty! I used half & half for the milk.

very tasty. i added chopped asparagus at the very end. and about 1/4 cup red leaf aged cheddar cheese for a kick
