- 1 head cauliflower (broken into small florets)
- 1 pkg. garbanzo beans (Melissa's steamed, or one 15 oz. can garbanzo beans, rinsed and drained)
- 20 oz. diced tomatoes (with green chiles)
- 14 oz. unsweetened coconut milk (reduced fat)

Yummy. Family favorite and I prob double the curry - I use mild and it’s not strong enough.

All in all, a good idea in need of adjustment. Due to pandemic-disordered supply lines and personal tastes, I have already made the following adjustments: 1) Used frozen cauliflower florets, since fresh was unavailable
2) Used heavy cream, since my husband dislikes coconut milk in savory dishes
3) Left out the cilantro, because I forgot
The flavor was pleasant, but missing a savory element that I cherish from my earliest curry experiences. I might add some vegetable Better Than Bouillon when I make this again.

It turned out pretty great the flavors aren’t too strong, using basmati rice was a nice touch

good recipe. very easy and quick.The taste was a bit flat. less coconut creme, and more salt and chili will make great upgrade.

It made a lot of food. I would even say that this recipe makes enough for a family of 8 with small children

Delicious and very easy. This was my first attempt at a curry and it turned out great!

Delicious just add salt! Lots of salt and i added more curry powder too. I doubled the seasoning.

Excellent!! Oh my gosh it was so good! The coconut milk made it so creamy and delicious!! My husband the meat man loved it! A definite keeper and will be making again!

I added garlic when I sautéed the onions in the beginning.

Had a vegetarian friend over so I made this meal. Turned out fantastic! I’m usually someone who thinks it’s not a meal without meat but now I make this regularly.

very easy to make. i added spinach to mine & extra seasoning for flavor.. tasted great! even the kids liked it. will definitely make it again.

Great I love it
It was easy to make just go easy on the cayenne pepper the first time I made this recipe it was a bit to Spivey even for me.

Tip: slowly add in the coconut milk to make sure it doesn’t turn out as liquidy as mine. I added in chili flakes to amp up the spice and spinach for more veggies.
Leftovers were more tasty.
Overall delicious dish. Will be making more in the future

Delicious!! Will definetly be making this again. Didn't add the tomatoes or cilantro,don't like either of those and added garlic and haberno peppers instead. Also didn't have coconut milk so used cream of coconut instead turned out creamier and thicker..was really good!!

This recipe tastes exactly like expected. I did spice up the curry by another teaspoon, and added more cayenne for heat. Loved it!
