Pizza is kryptonite to T1 diabetic. With a few modifications, this recipe is Diabadass. One large head of cauliflower makes three crusts for me. Line a microwave safe bowl with four layers of full sized paper towels, then put in the raw shredded cauliflower. Microwave 4min. Fold edges of towel over, press down with a silicon mitt. Open the towel, placing cauliflower into warm bowl, releasing more steam. Should be slightly moist. Sprinkle on the coconut flour and spices. Mix well. While cooling completely, line a perforated pizza tray or top of a broiling tray or the basket of an air fryer with parchment paper, folding paper edges under. In a small bowl, mix egg well, place in a well in the middle of the cauliflower mixture. Mix well. Sprinkle cauliflower mixture evenly to make a thin layer. Press down with clean fingers to make the crust confluent, making a slight rim. Bake as directed 425’F until slightly golden brown. Toppings as desired, but not more than 1 tablespoon sauce per pizza. I can finally enjoy low carb pizza again!

Great! The crust was very consistent, you can taste a little bit of coconut flavor but it didn’t matter to me

Super tasty and great alternative to real pizza crust. Once there are toppings you’d never know the crust wasn’t bread. The key to this: it’s essential to get every bit of water out!! My edges were great but everything else was very soggy.

This tasted delicious but only got crispy around the edges. I’m going to have to get a cheesecloth to get more water out of the cauliflower. It’s definitely worth trying again.

Really liked it however the crust kind of came apart and wasn't as crunchy as I had hoped. A very tasty alternative though!

this worked great!! we doubled the amount and added one extra egg (3 in total). the pizza was super tasty and really filling. will be investing in a cheese cloth as squeezing the water out with paper towels was a bit messy and wasteful. great recipe!!
