- 4 cups cauliflower (chopped into small, about ¼-1/2 inch pieces)
- 1 tsp. chili powder
- 1/4 tsp. smoked paprika
- cayenne pepper (to taste)
- 14.5 oz. diced tomatoes (1 can, fire-roasted, diced tomatoes are best if you can find them, drained of extra liquid)
- 8 corn tortillas (6-inch)
- 2 avocados (pits removed and cut into chunks or slices, or 1 cup guacamole)
- 1 cup guacamole
- 2 romaine lettuce (chops chopped)
- 1 cup cilantro leaves (chopped)
- 1/2 cup cream (cashew)
- 1/2 cup sauce (cashew queso)
- 1 cup cucumber (chopped)
