    This is one of my favorite go-to recipes. I’m not a big green pepper fan so I just omit that and use more red pepper. It is soooo good, my family (incl. picky children) love it....even my mom (whom hates cauliflower) went back for seconds, once I convinced her to try it.

    I've made this recipe several times and it's a hit. I've found these substitutions make it more to our taste: Mexican cheese for the cheddar, Italian bread crumbs for the corn flakes, one red bell pepper (no green) diced and sauteed until soft. We also prefer grated provolone cheese more than parmesan.

    Absolutely loved this recipe. I didn't tweek it at all. I have made this about a dozen times and it's always our favorite.
