- 4 chicken thighs (British Poultry)
- 1 cup bulgur wheat (approx. 200g)
- 1/2 cauliflower (large, chopped into small pieces)
- 2 peaches (large semi-ripe, deseeded, cut into 6 wedges each)
- 2 garlic cloves (finely chopped)
- 1 1/2 Tbsp. ginger (finely chopped)
- 1 onion (finely chopped)
- 1 Tbsp. ground coriander
- 1 Tbsp. ground cumin
- 100 mL single cream
- 2/3 cup water (i.e. a little less than 1 full cup)
- 1 lemon (small, and zest of 1 large lemon)
- olive oil (for frying and drizzling)
- 6 Tbsp. fresh coriander (finely chopped)
- sea salt
- pepper
- 3 Tbsp. runny honey
- 1 1/2 Tbsp. lemon juice
- 1 Tbsp. olive oil
- 1 tsp. onion (each: garlic powder, granules, chilli flakes and ground ginger)
