delicious! I learned a new trick for baking fish niggets (spraying xooking oil makes all the difference. Only comment/note I have is cooking it another 10-15 minutes longer than advised.

A seeming complex, but in truth quite easy to make dish.
My only criticism would be that the breading could be more balanced and flavorful. With this recipe it tastes (unsurprisingly) a lot like corn .
I’d cut the cornmeal in half and substitute the remainder as half breadcrumbs and half Parmesan cheese and then add a teaspoon of black pepper
