Cast Iron Sweet Potato Bacon Skillet

This one is very versatile. You don't even have to use sweet potatoes! Sometimes, when I'm feeling frisky, I use a yama potato. This feeds me and my husband nicely with a bit leftover for his breakfast. The things I always keep in this recipe are bacon, potato, and zucchini. I'm plugging in the recipe from the last time I did it because that has been the best thus far. NOTE: I've done this so many times I've lost count and the trick is to not go crazy with the grease or oil. Add a little more here and there if things are sticking to the pan, but don't make it a pool. If you do your veggies will become mushy in the oven and you'll have a layer of greasy water (water comes form the mushrooms/zucchini) when you pull it out. YES, this is a paleo recipe minus the cheese and olive oil (which is optionall)
Ingredients
- 1 bacon (pack)
- 1 shallot (large, diced)
- 1 lb. sweet potato (diced)
- 1 zucchini (diced)
- 4 oz. baby bella mushrooms (diced)
- 1/2 red bell pepper (diced)
- 1/2 yellow bell pepper (diced)
- 2 cloves garlic (minced)
- pepper (to taste)
- 6 eggs
- Tabasco (for garnish, optional)
- cheese (for garnish, optional and not paleo)
Directions
- In a 10 inch cast iron skillet (or any oven proof skillet with a lid) start cooking your bacon. I like to take the whole pack out, put it on a cutting bored (strips unseperated), and cut them into squares. This eliminates the step of having to crumble it when it's done. Once bacon is all beautiful and crispy, transfer it onto a plate lined with paper towels. Leave about 1 tbl of grease in the pan for frying.
- While the bacon is cooking, preheat your oven to 400 degrees and chop up all your veggies. Think of this like a hash. I chop my sweet potato into small squares (approx 1 inch) and chop the rest of the veggies into a similar size.
- With bacon removed, on med heat, add sweet potatoes. Try to put them in one even layer and then leave them alone for about 5 min. You want the bottom of them to start to crisp a bit. Keep an eye on the grease, sometimes the potatoes soak it all up and you need to add a bit more or a little olive oil.. Do a little at a time, trust me. The mushrooms and zucchini release liquids while baking and can become mushy if there's still a lot of grease in the bottom of the pan.
