- basil pesto (Pecan Spinach, Ingredients:)
- 2 cups fresh spinach leaves
- 10 basil leaves
- 2 cloves garlic
- 1/4 cup pecans
- 1/4 cup asiago cheese (grated)
- 1 pinch salt (and pepper)
- 1/4 cup extra-virgin olive oil
- 1 lb. pizza dough (fresh, rolled out to 12 inches in diameter, or to fit the cast-iron skillet, my skillet is a 12 inch skillet; if you don’t have a cast-iron skillet, you can make the pizza using a pizza stone instead)
- 3/4 cup crushed tomatoes (canned)
- 1/2 cup chopped tomatoes (freshly)
- 3/4 cup shredded mozzarella cheese
- 1/2 tsp. dried basil
- basil pesto (Prepared Spinach, see recipe above)
