- 2 lb. boneless pork chops
- 2 yellow onions (finely sliced)
- 4 Tbsp. olive oil
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 Tbsp. dried thyme
- 1/2 Tbsp. garlic powder
- 1 Tbsp. flour
- sliced provolone
- 1 cup Gruyere cheese (shredded)
- 2 cups chicken stock
- fresh thyme (for garnish, optional)
- crusty bread (for serving)

Directions
- Preheat oven to 400°F.
- In a cast iron skillet add half the olive oil and heat over medium-high heat.
- Add the sliced onions and cook for 5 minutes on medium heat then reduce heat to medium/medium-low and cook for an additional 15 minutes to caramelize the onions.
