- 8 garlic cloves (unpeeled)
- 8 sausages (Toulouse)
- 400 grams smoked streaky bacon (whole piece of, or pancetta)
- 2 red wine (generous glasses of)
- 600 grams Italian tomatoes (good-quality chopped canned)
- 1 bay leaf
- 2 thyme (sprigs)
- 400 grams cannellini beans (or cans white haricot beans, rinsed and drained)
- 50 grams breadcrumbs (fine white)
- chopped parsley (a little, to serve)
- 500 grams goose fat (jars, it sounds a lot, but you can re-use it again and again)
- 8 pheasant (legs, bone in)
- 10 black peppercorns
