Fairly straightforward and quick recipe. These turn out to be very shortbread, so if you’re looking for more structure and rise to your cookie, consider adding apple sauce, a banana, or an egg for non-vegans. Additionally I found that the cookies turned out salty, and will ~half the salt next time. The cookie edges also browned slightly while the centre was still raw, so in future I’ll bake at ~300 for 20-30min to avoid bitterness
