  • 1 1/3 pounds carrots (peeled and coarsely grated)
  • 1/2 cup orange juice (freshly squeezed)
  • 2/3 cup walnuts (chopped and toasted)
  • 3 tablespoons honey (plus additional for drizzling)
  • whole grain bread (or fruit bread, to serve)

    Directions

    1. Cook the carrots with the orange juice in a saucepan for 6-8 minutes until softened. Set aside to cool.
    2. Reserve 1 tbsp of the walnuts for garnish. Place the remaining walnuts in a food processor. Add the carrots and honey and process until smooth.
    3. Transfer the mixture to a serving dish and sprinkle with the reserved walnuts. Serve spread over bread. Drizzle with additional honey, if desired.
