- 300 grams grated carrot (around 3 large)
- 4 whole large eggs (70 gm - extra large)
- 300 mL oil (plain, or 1 1/4 cups of veg, rice bran, macadamia | 1 1/2 US cups)
- 2 tsp. vanilla
- 1 cup caster sugar (200gm- 7oz)
- 1/2 cup brown sugar (100gm 3.5 oz)
- 2 tsp. baking powder
- 2 tsp. bicarbonate of soda
- 1 cup almond meal (100 gm- 3.5oz, or flour)
- 1 cup gluten free flour (120gm-4.2oz, I always use Aldi's mix)
- 1 tsp. canela (heaped)
- 1/2 tsp. ground cardamom
- 1/2 tsp. nutmeg (or any spices you like 2-3 teaspoons)
- 500 grams unsalted butter (softened)
- 500 grams cream cheese (softened)
- 300 grams icing sugar (sifted)
- 1/2 tsp. salt
- 1 tsp. vanilla extract
- 150 grams caster sugar
- 1 Tbsp. water
- 50 grams butter (cold, cubed)
- 2 Tbsp. cream
- 1/2 tsp. salt (or more to taste)
- 1 packet microwave popcorn
- 1 cup caster sugar
- 2 Tbsp. glucose syrup
- 1 water (Table spoon)
- 1/2 tsp. lemon juice
