- 1 cup zucchini (grated, laid loosely in cup and not packed, about 1 medium/large trimmed zucchini)

It's baking now, so I'll let you know! I wanted to get the following down:
I could not find ANYWHERE - on this page or the directions' page - a temperature for the oven, or a baking time. Kind of important details to leave out....I'm going with 350F and starting with 50m. Also, I'd love everything to be on one page instead of having to jump back and forth and scroll up and down as I put it together. So I'm not crazy about the layout.
I substituted plain Greek yogurt for the sour cream, because I didn't have any sour cream, and I added a 1/2 tsp of fresh-grated nutmeg because....nutmeg! Otherwise, I hope this comes out great because I LOVE zucchini-carrot bread, and I.ve been on a baking spree now that summer is coming to an end.

It was so delicious!!! My 10yr old hates veggies, but he devoured it. It was very moist and not too sweet. I used pecans in the batter and topped it with cream cheese frosting.
