- 4 Yukon Gold potatoes (rinsed and scrubbed, approximately 2.5 pounds)

- 1 bunch carrots (rinsed, dried and pluck from the stem. Discard the tough stems)

- 8 bread and butter pickle slices (roughly chopped)
- 1 Tbsp. pickled red onions (chopped)
- 1 Tbsp. pickling liquid (the red onion)
- 1 Tbsp. pickle brine (the bread and butter)
- 2 Tbsp. whole grain mustard
- 1 Tbsp. apple cider vinegar
- salt
- freshly ground black pepper
- 2 Tbsp. grapeseed oil
