Ingredients

- 1 tsp. finely grated orange zest
- 2/3 cup freshly squeezed orange juice
- 1/3 cup safflower oil
- 3 Tbsp. rice vinegar
- 2 Tbsp. wheat-free tamari
- 2 Tbsp. toasted sesame oil
- 2 Tbsp. fresh lemon juice
- 2 Tbsp. minced fresh ginger
- 1 Tbsp. minced shallots
- 2 tsp. minced garlic
- 1 tsp. coconut sugar (or cane sugar)
- 8 medium carrots (spiralized with the stand mixer attachment; 8 cups)
- 1 cup Cilantro leaves (firmly packed)
- 1 cup fresh mint leaves (firmly packed)
- 1 medium orange (zested)
- 2 Tbsp. toasted black sesame seeds
- sea salt (to taste)

Directions
- To make the dressing, pour all of the ingredients (1 tsp orange zest, orange juice, safflower oil, rice vinegar, wheat-free tamari, toasted sesame oil, fresh lemon juice, minced ginger, minced shallots, minced garlic, coconut sugar) into your KitchenAid® blender and puree on high for 30 to 60 seconds until the ingredients are pulverized and the mixture is emulsified.
- In a large salad bowl, gently toss the spiralized carrot, cilantro, mint, orange zest from 1 medium orange and sesame seeds.
- Pour the dressing over the salad, and toss so that the ingredients are evenly coated.
- Season with salt to taste.
