- 1 cup almond flour (or cashew meal, find Honeyville almond flour)
- 2 Tbsp. allspice (a mix of cinnamon, nutmeg, and cloves)
- 1/2 tsp. sea salt (Real sea salt brand is best)
- 1/2 tsp. baking soda
- 6 organic carrots (large, finely shredded or chopped)
- 1/2 cup honey (raw, local, OR REAL Grade B maple syrup)
- 1 Tbsp. molasses (organic, find it here)
- 1/2 cup unsweetened applesauce (find organic applesauce HERE OR crushed pineapple)
- 1 Tbsp. vanilla (I love Rodelle vanilla extract)
- 1/4 cup melted butter (/ghee OR coconut oil, Tropical Traditions is best)
- 6 eggs
- 3/4 cup chopped walnuts (or raisins, or both, optional)
- 1 cup shortening (Spectrum palm oil, or grass-fed butter, room temp)
- 2 Tbsp. raw honey
- 1 Tbsp. vanilla extract
- 1/4 cup tapioca flour
