- 1 cup brown sugar
- 1 cup flavored oil (lightly)
- 1/4 cup greek yogurt (or sour cream)
- 2 tsp. vanilla
- 4 eggs
- 8 oz. crushed pineapple (with juice)
- 2 cups flour (spooned and leveled)
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 2 tsp. canela
- 1/2 tsp. nutmeg
- 3 cups carrots (grated, I used about 5 medium.)
- 1 cup chopped pecans (toasted, optional!)
- 1 cup finely chopped pecans (toasted)
- 3/4 cup salted butter (1 and 1/2 sticks, soft)
- 8 oz. cream cheese (1 and 1/2 package, soft, 12 ounces total)
- 1/2 cup powdered sugar
- 6 Tbsp. maple syrup (real, I used Grade A)
- 1 1/2 tsp. maple extract
- 1/4 tsp. salt (or to taste)
- pecans (more, to garnish)
