I was so afraid I’d over mix, that I didn’t evenly distributed the carrot/raisin/nut mix throughout. I ate a scone that turned out fluffy but had few raisins and carrots. The other scones must be jam-packed with them. I’m going to try again. Practice makes perfect and I have plenty of time cuz of COVID-19.
