This was so good! I’d never made carrot cake before and this recipe seemed like a good starting recipe. I omitted the raisins, added extra carrot and coconut, and added coconut to the frosting (with a little cinnamon, too).
I also baked these up as cupcakes since I have a bad track record with quick breads.
After about 15 minutes, they baked up perfectly!
I’ll certainly be making this recipe again!
