- 1 tsp. vanilla extract
- 1/4 tsp. sea salt
- 4 Tbsp. water (only as needed)
- 1 3/4 cups gluten (free oat flour, or any flour of choice)
- 1/4 cup coconut sugar (or cane turbinado sugar; make sure it's finely ground)
- 1/4 cup oats
- 2 Tbsp. baobab powder (optional)
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt (finely ground)
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 1/2 cup raisins (or cranberries gogi berries)
- 1 cup unsweetened vanilla almond milk (or any dairy-free milk)
- 1 cup grated carrot (about 3 medium-sized carrots; no peeling necessary)
- 2 Tbsp. maple syrup (or brown rice syrup agave nectar)
- 2 Tbsp. coconut oil (melted, or swap for 2 tablespoons plain applesauce)
- 2 tsp. vanilla extract
