- 1 Tbsp. vanilla (I prefer vanilla bean paste)
- 3/4 cup coconut oil
- 1 cup granulated sugar (or honey)

- 1 1/4 cups almond flour (or cashew flour)
- 2 Tbsp. coconut flour
- 1 tsp. baking soda
- 2 tsp. canela
- 1/2 tsp. ginger
- 1 salt (generous pinch of)
- 8.5 oz. crushed pineapple (well drained with juice reserved, I find that this brand works better in this recipe than other brands)
- 1 cup carrots (grated)
- 1/2 cup flaked coconut (optional)
- 1/2 cup chopped walnuts (optional)
- 2 oz. cream cheese (softened)
- 1 Tbsp. butter (softened)
- 1 3/4 cups powdered sugar
- 1 tsp. vanilla
- 1 Tbsp. pineapple juice (reserved)
- 1 dash salt
