- 1 cup avocado oil
- 2 cups date sugar (or another sugar of choice)
- 1 tsp. canela (I always use a little more)
- 1/4 tsp. nutmeg (I always use a little more)
- 4 eggs
- 1 tsp. vanilla extract
- 2 cups farinha de mandioca (Otto’s Natural Cassava Flour)
- 2 tsp. baking powder (Aluminum Free)
- 1 tsp. salt
- 1 1/2 tsp. baking soda
- 8 oz. crushed pineapple (drained)
- 2 cups baby carrots (grated)
- 1 cup walnuts (chopped, optional)
- 1/2 cup raisins (optional)
- 4 cups powdered sugar (I have also done it with 2 cups, it’s up to you.)
- 8 oz. cream cheese (Packs of)
- 1 stick Kerrygold Butter (Unsalted)
- 4 tsp. vanilla extract
- 1/2 meyer lemon (for Juice, optional)
