- 2 cups almond flour (also called almond meal)
- 3/4 cup coconut flour
- 4 tsp. baking powder
- 1 tsp. baking soda
- 3 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1/2 tsp. ground cloves
- 1 tsp. ground allspice (optional)
- 1/4 tsp. salt
- 6 large eggs
- 1 1/4 cups xylitol
- 8 Tbsp. unsalted butter (melted)
- 1 1/4 cups whole milk
- 1 lb. carrots (6-7 medium carrots, unpeeled, grated)
- 2 1/2 frosting (times the, recipe will give you enough for some wiggle room and frosting swirls)
- 8 oz. cream cheese (softened but still cool)
- 5 Tbsp. unsalted butter (softened but still cool)
- 1 tsp. vanilla extract
- 3/4 cup xylitol (add more to taste)

This is about as good as it gets for a ‘real life’ carrot cake. Based on what I like I made some minor alterations to get it as close as I could to my memory of Grandmas: Firstly I substituted butter with oil. I used avocado, but anything healthy works. I added an extra cup ish I guess of carrots... who knows what is exact? Added walnuts and substituted coconut milk versus recipe. For a twist I tossed in some grated orange peel to the frosting... zippy! Thanks!
