  • 2 eggs
  • 1 teaspoon vanilla extract

  • 1 cup whole wheat flour (run a fork through before measuring)
  • 1/2 cup oatmeal
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup banana (mashed ripe, about 2 large)
  • 1 cup grated carrot (about 3 large)
  • 1/2 cup golden raisins
  • 1 teaspoon flour
  • 1/2 cup chopped nuts
  • sunflower seeds (for sprinkling over top, optional)
  • cream cheese frosting (optional)
  • 4 ounces cream cheese (softened)
  • 1/4 cup butter (softened)
  • 2 confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons milk

    Directions

    1. Preheat oven to 350 degrees. Butter and flour a loaf pan. Set aside.
    2. Whisk together flour, baking soda, salt, cinnamon and nutmeg in medium mixing bowl; set aside.
    3. In a large mixing bowl whisk the yogurt and honey together. Add eggs and vanilla. Mix well.
