The whole family loves this recipe! Great to make for Sunday brunch or to be eaten throughout the week, piece by piece.
Ingredients

- 10 oz. frozen spinach (drained and chopped)
- 8 oz. shredded swiss cheese
- 2 Tbsp. flour
- 2 cups half & half
- 4 eggs (beaten)
- 8 slices bacon (uncooked and chopped, or use bacon bits instead)
- 3 Tbsp. butter
- 1 onion (medium, chopped)
- 3 green onions (optional)
- 1/4 tsp. cayenne pepper
- pie shell (uncooked)

- Toss cheese with flour
- Saute bacon and onion until cooked
- Combine all ingredients, then pour into a pie shell
- Bake at 350 for 45 minutes
