- 8 garlic cloves (medium, peeled)
- 1/2 white onion (medium, roughly chopped)
- 1 Tbsp. Mexican oregano (dried, I used regular oregano, which worked fine)
- 1/2 tsp. dried thyme
- 5 tsp. kosher salt (it’s a lot of salt but it’s also a lot of meat)
- 5 lb. boneless pork shoulder (cut into 2-inch chunks)
- 3 bay leaves (dried)
- 1 cup coca-cola
- 1/2 lb. tomatillos (5 or 6, husked, rinsed, and coarsely chopped)
- 1/2 cup chopped cilantro (coarsely)
- 2 jalapeno chilies (fresh, coarsely chipped, including seeds or more to taste)
- 1 large garlic cloves (peeled)

- 1 1/2 tsp. kosher salt
- 1 1/2 cups tomatoes (diced seeded, I used cherry tomatoes, which work great in winter)
- 1/3 cup purple onion (finely chopped)
- 1/4 cup chopped cilantro
- 2 tsp. grated lemon zest (finely)
- 2 Tbsp. lemon juice (freshly squeezed, or more to taste)
- 1 1/2 Tbsp. serrano chile (finely chopped fresh, including seeds, or more to taste)
- 1 1/2 tsp. kosher salt
