To Serve: Serve pork mixture over quinoa.
Ingredients

- 1 lb. rotisserie pork
- 15 oz. black beans (drained, rinsed)
- 3 cups cherry tomatoes (halved)
- 1/2 cup cilantro (chopped)
- 2 avocado (peeled and diced)
- 1 tsp. kosher salt
- black pepper (cracked, as needed)
- 4 Tbsp. lime vinaigrette
- 2 cups quinoa (rinsed)
- hot sauce (to taste)

Directions
- For the Pork: Dice rotisserie pork.
- Bring four cups of water to a boil in a large stock pot. Cook quinoa according to package instructions
- In a mixing bowl, combine pork, beans, tomatoes, cilantro, avocado, salt, pepper and lime vinaigrette. Toss to combine and coat all ingredients.
