Featuring thinly sliced beef and beans in a flavorful tomatillo and serrano chili broth this soup has the perfect balance of fresh, savory, and spicy flavors. Add the serrano chili only if you want a spicier stew or add more if you like things hot. Serve with fresh coriander, lime, chopped onion, and bacon.

  • 0.5 kilograms beef (thinly sliced)
  • 4 cloves garlic
  • 1 onion (small)
  • salt
  • 0.5 kilograms beans (cooked)
  • 0.25 kilograms tomatillos
  • serrano chili (optional)
  • 1 onion (medium)
  • 1 sprig cilantro
  • 150 grams bacon (fried and chopped)

    Directions

    1. Cook the meat in water. Add 2 cloves of garlic, the small onion, and salt.
    2. Once the meat is cooked, remove the garlic and onion. Add the beans with some broth.
    3. Puree the tomatillos, medium onion, 2 cloves of garlic, and cilantro. Puree the serrano chili in this mixture as well if a spicy flavor is desired. Strain and add to the meat.
    4. Bring to a boil and add salt if needed.
    5. Serve in a soup dish. Add bacon, onion, coriander, lime, and sauce as desired.
