I make this at least once a week, because you can switch out the meat with other ones, like rotisserie chicken shredded, left over meatballs or whatever you like. I did spray the bottom with non stick spray and then some choice white cheddar cheese, sprinkled that on the bottom of the casserole dish. It helps with the tamale edges stay closed.I also sprinkled the top with green onions and cilantro.Make 2x the avocado sauce, so that you can pour more over the top after baking.

Simple and still layered with flavor!....probably my favorite version of enchiladas (and I LOVE enchiladas!)....I do add a sprinkle of diced chiles to each enchilada for a little kick.....
