- 1 Tbsp. olive oil
- 1/2 medium onion (chopped)
- 1 sweet potato (medium, ~10 oz., halved or quartered lengthwise then cut into 1/4 inch slices)
- 1 bell pepper (chopped)
- 1 tomato (chopped)
- 1 bunch kale (chopped)
- 15 oz. chickpeas (drained, or same amount of cooked chickpeas)
- 15 oz. coconut milk (regular or light)
- 1 cup vegetable broth (or broth of your choice, or 1 cup water + 1 tsp. Better than Bouillon - vegan version here!)
- 3/4 tsp. curry powder
- 1/4 tsp. cayenne pepper
- 1/8 tsp. canela
- 1 dash nutmeg (about 7 grates on a microplane)
- salt (to taste, my taste? about 1/2 teaspoon, depending on the saltiness of the broth)
