Island spices season this simple pork roast. Bake some sweet potatoes alongside this roast and accompany with buttered broccoli spears and deli cole slaw with some diced pineapple stirred in.


  • 3 pounds pork loin roast
  • 2 teaspoons olive oil
  • 1 tablespoon black pepper
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon

    1. Blend oil, pepper, nutmeg and cinnamon in small bowl. Brush mixture evenly onto roast. Place pork in shallow pan; roast in 350 degrees F. oven for 1 hour (20 minutes per pound) or until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes. before slicing.
