- 4 New York pork chops (1/2 inch thick)
- 6 cups mixed salad greens
- 15 oz. black beans (rinsed and drained)
- 1/4 red onion (halved and thinly sliced)
- 2 mangoes (large, ripe, peeled and cubed)
- 1/2 cup vinaigrette dressing (fruit-flavored, your choice)
- salt (to taste)
- pepper (to taste)

Directions
- Prepare a grill to medium-high heat (about 450°F).
- Season pork with salt and pepper.
- Oil grill grate. Grill chops over direct heat until the internal temperature reaches 145°F. Remove chops from the grill and let rest for 3 minutes.
- Cut pork chops into 1/2 inch cubes.
- In large bowl, gently toss all ingredients with dressing. Serve on shallow salad bowls or dinner plates.
