I'm allergic to onions, garlic & peppers ... so you'd think this wouldn't work. But, I was able to modify the salad by eliminating garlic & pepper, changing chicken to pork (cuz that's what I had & very Caribbean too) & adding tomatoes and cracked pepper. The salad was amazing! I'm sorry there's no pictures, one bite and I couldn't stop!
