Description
Cod is a great fish to transform into this bold Caribbean-inspired dish. The delicare fish is flavored with lime, ginger, garlic, and turmeric. The fish is then added to a mixture of sweet potato, plantains, and tomato which makes a filling meal that is packed with flavor. This dish comes together in less than an hour, which makes it great for a dinner any night of the week.

- 800 grams cod (diced, large dice cut)
- 2 garlic cloves
- 1 lime juice
- 1 tsp. fresh ginger (grated)
- turmeric
- 2 sweet potatoes (big or 3 small)
- 1 tomato (cut in small cubes)
- 1 plantain (sliced)
- salt
- ground black pepper
- olive oil

Directions
- Put the fish in a baking pan with crushed garlic, lime juice, ginger, a pinch of turmeric, and a teaspoon of colombo powder. Drizzle with a little olive oil, stir, and place in refrigerator to marinate.
- Meanwhile, peel and cut the sweet potatoes into large cubes. In a large skillet, brown the potatoes in a little bit of olive oil. Once browned, add the tomato, the remaining teaspoon of colombo, and fill halfway with water. Cook on low heat for about 15 minutes. Add the sliced plantain, fish, and its marinade. Cook 5 to 10 minutes more. To test for doneness, prick plantain slices with a knife, they should be tender. Add salt and pepper.
